鱼鳍边肉，取自太平洋比目鱼两侧裙边，肉质肥厚，鲜美爽口
做法：
一、蒸：
1，姜末儿或姜丝、料酒放在一起抓匀，放五分钟左右；
2，直接上锅蒸五分钟左右再加入姜、葱、小米辣碎，再加酱油；
3，最后用热花椒油浇上去即可。（热花椒油做法：锅放适量油加入一小把花椒，差多冒黑烟的时候关火。把花椒滤掉，热油浇到裙边上。）
二、切段刷火锅
三、做寿司、包饺子
